Growing Love: The Beautiful Vineyard Expansion at The Gardens of Castle Rock

The vineyard at The Gardens of Castle Rock continues to thrive—expanding not just in lush vine growth, but in total footprint and grape varietals.

To recap the journey: the first phase of the vineyard was started in 2021 with an initial planting of 102 vines of Frontenac Gris, Adalmiina, Petite Pearl, and Crimson Pearl varietals. In 2025, we doubled our footprint by adding 120 new vines. We selected Prairie Star and St. Pepin—two white varietals bred to adapt to the extreme cold of Minnesota winters.

Expanding the vineyard required far more than just digging a few holes. First came heavy land clearing… and we mean heavy. We’re talking twelve 30-foot pine trees, along with a massive 55 ft maple that fell during a strong storm in March 2025. True to our sustainable mission, The Workshop at The Gardens harvested all the wood to be cut and dried using the onsite sawmill and wood kiln. (We’re very self-sufficient!)

The trees may be gone, but the stumps remained. After grinding down all 13 stumps and clearing the space, the hard-packed soil required substantial tilling. Once the soil had been cultivated, it was time to hand-dig 120 holes (each roughly 16” deep by 12” wide)—and it wasn’t easy. Thanks to the mature trees that once stood in this spot, the leftover root systems had to be extracted from a quarter of the holes. Once the holes had been dug, the 120 vines were planted and fitted with a protective grow tube to accelerate shoot growth.

To support the future vine canopy, we installed sturdy wooden end posts and steel line posts. In 2026, we began stringing high-tensile trellis wires to support the vines as they climb. And now we patiently wait. Grapevines typically take 3 years to establish a meaningful harvest, and 4–5 years to produce a full yield. So, we spend our days mowing, managing weeds, and keeping curious critters like raccoons, wild turkeys, and deer at bay.

With the vineyard becoming a popular backdrop for wedding photos, first looks, and private vows, it was time to build a covered wooden pavilion. This isn’t a kit or a preconstructed package. It was 100% designed and built onsite by The Workshop at The Gardens, just like every other structure on our property. We don’t do faux, and we don’t do artificial; we build authentic structures with true craftsmanship.

The next step is to lay the paver floor and pathway, followed by designing the surrounding landscape to anchor The Vineyard Pavilion seamlessly into the vineyard setting.

Situated at the south end of the vineyard, The Vineyard Pavilion adds a charming architectural feature to the space while serving as a beautiful setting for capturing special moments, no matter the weather.

What will we do with all these grapes? We are thrilled to share that planning is underway for a farm winery on the north side of The Gardens’ property—just a short, scenic walk from the vineyard itself! Stay tuned as this exciting addition grows.

Beyond Autumn Tones: A Vibrant, Multi-Hued September Celebration – Real Wedding Spotlight

When Emily and Maddie toured The Gardens of Castle Rock on January 30th, the venue was in the “dead of a Minnesota winter”. Despite the challenge of envisioning an outdoor ceremony and reception in the cold and snow, they immediately fell in love with the space, remarking, “We would have gotten married right then and there with no additional décor because we loved it so much”.

After booking a mid-September date, they intentionally designed a vibrant celebration of love and personality, beautifully set against the venue’s lush greenery and unique wooden structures.

When the big day arrived, Emily & Maddie chose The Lath House for their ceremony site, a location characterized by sprawling grapevines and thousands of café lights. Instead of arranging the guest benches in traditional straight lines facing the natural wood pergola, they opted to turn the benches 90 degrees, angling the outside seating toward the center of the structure. This configuration created a circular space where Emily and Maddie stood in the middle with their officiant, literally surrounded by their friends and family. Hanging directly above them was a striking circular floral, vibrant autumnal palette installation crafted from grapevines, dahlias, zinnias, and marigolds, which were intertwined with festive orange and yellow garlands.

After The Lath House ceremony, the reception transformed into a lively, festival-inspired celebration filled with unique interactive elements and spirited entertainment. Moving away from a traditional paper-and-pen guestbook, Emily and Maddie featured a Lego Guestbook station, where friends and family were invited to build personalized figures to mark their presence. Following a delicious dinner by Sasquatch Sandwiches, thanks to The Gardens Open Catering policy, the entertainment took center stage as The Gender Outlawz performed under the purple-hued lights of the stage.

While many guests joined the couple on the dance floor, others enjoyed a more relaxed atmosphere playing cornhole and various yard games on the lawn. To satisfy sweet cravings, a mid-height table in the Wedding Reception Tent was filled with an assortment of cookies, bars, and cupcakes. For a more hands-on treat, guests could visit a “S’mores Upgrade Station,” which offered individual kits stocked with premium chocolates, fluffy marshmallows, and graham crackers.

As the evening ended, it was clear that Emily and Maddie had successfully created a vibrant, late-summer celebration of love and personality. From the intimate, circular ceremony in The Lath House to the high-energy performances and interactive stations, every detail reflected commitment to fun, inclusivity, and personal expression. Their wedding was more than just a celebration; it was a festival of love that utilized The Gardens to create a truly one-of-a-kind experience for everyone involved.

“The Gardens of Castle Rock helped us achieve the wedding of our dreams. My wife and I toured the venue and fell in love with the place even in the dead of winter, we said to each other ” we would do it right here right now with no additional decor” because we loved it so much. This venue was not only LGBTQ inclusive but was very intentionally more than just inclusive/tolerant- they made it very clear they were LGBTQ SUPPORTERS AND ALLIES. Stately Wooden Lath House Covered Pergola for an Elegant Outdoor Wedding Ceremony

Who would have known that over 25 years ago, when we installed the cedar pergola on the walkway right in the middle of the nursery’s retail space, that it would turn into such an important part of The Gardens of Castle Rock?

As a landscape architect, I’ve always been intrigued by how structures define a garden. A pergola is a classic “gateway”—a grand entrance that moves you from one space to the next. It’s the perfect metaphor for a wedding: a literal gateway into your new life together.

While cedar is a wonderful wood, our original structure was finally starting to show its age. When it came time to replace it, we drew inspiration from the original design, but elevated it with everything we’ve learned since.

The new Lath House Covered Pergola is a testament to our commitment to authenticity and sustainability. The structure is crafted entirely from dead ash trees salvaged from our property that were affected by Emerald Ash Borer. All of the ash trees were milled into wood right here in our own log yard. To protect the timbers from the elements, we added a roof. The subtle eyebrow arch maintains an open pergola feel while also providing shelter. Underneath the roof, the ceiling is finished in rich black walnut, creating a beautiful contrast with the lighter ash timber.

The addition of the roof enhances that “gateway” feeling, playing with light and shadow as you walk through. This structure is now one of 11 authentic timber-frame builds at The Gardens, each showcasing a different aspect of the craft we love and providing a stunning backdrop on wedding days.

We can’t wait for you to walk under it on your way to your new forever.

Middle-earth Wedding Apparel: From Hobbits to High Elves

To honor the unwavering courage of Frodo Baggins, Matt styled his attire after the high-status Hobbit, complete with a bright red jacket and walking stick. His “groomshobbits” resembled Frodo’s loyal companions—Samwise, Merry, and Pippin—dressed in signature Hobbit apparel:

Traveler’s Cloaks: Each wore a cloak fastened with a leaf-shaped clasp, a direct reference to the Cloaks of Lórien gifted by the Elves in Peter Jackson’s films.

The Setting: Finding Hobbiton in Minnesota

Amber and Matt chose The Gardens of Castle Rock because our handcrafted structures and woodland backdrops perfectly match the Lord of the Rings aesthetic.

The Cruck Frame: The pointed arch of our timber-built structure at the Lath House entrance evokes Elven architecture that looks “grown” rather than built. This “thin place” serves as a hidden sanctuary where different worlds meet.

The wedding reception emphasized a connection to the natural world, much like the pavilions of Rivendell.

The Feast: Our Cedar Banquet Tables are a direct match for the heavy timber trestle tables found in the common room of The Prancing Pony, where travelers gather for a half-pint and a song.

“The grounds were beautiful, but still comfortable with modern facilities. Communication was fantastic from start to finish, and the staff working on the day of the wedding were incredible. “We considered many places while shopping for an outdoor wedding venue near the Twin Cities. While many were absolutely beautiful, they pretty consistently lacked modern comforts and updated facilities. The Gardens of Castle Rock was the gem that supplied both. The grounds were absolutely stunning and beautifully decorated, AND the property was flat, the sidewalks were paved, and there was a small, but very modern bathroom building. It was a perfect mix of “out in nature” and indoor plumbing. Potholed earth and outhouses were just not going to cut it for our crew…….Communication was always spot on. The staff were always quick to answer questions and kept everything organized. The day of the wedding was crazy, but the Gardens Team all seemed to know exactly what to do. It was a huge relief to be able to focus on other things. Truly, we could not have asked for a more capable and attentive staff. Christina, the Set-Up Lead, was a blessing, and I don’t know how we would have managed without her.”

Allie & Jack’s beautiful wedding celebration masterfully blended timeless romance with contemporary, personal flair, perfectly befitting a modern couple. As the bride, Allie epitomized classic elegance in her white organza bridal gown, which featured a dramatic trumpet silhouette softened by an ethereal floral and leaf tulle overlay. Paired with a sweeping tulle cathedral-length veil, she chose a delicate bouquet of pastel pink and white roses, that looked utterly timeless. The bridal party continued the soft, romantic palette, with bridesmaids dressed in pale blue with smaller bouquets similar to Allie’s. Jack and his groomsmen maintained a sophisticated standard in sharp tuxedos, while the couple’s beloved dog Remi stole the show as the adorable “ring bear,” with the wedding bands hooked securely to his collar—a charming and modern personalization.
