Growing Love: The Beautiful Vineyard Expansion at The Gardens of Castle Rock

The vineyard at The Gardens of Castle Rock continues to thrive—expanding not just in lush vine growth, but in total footprint and grape varietals.

To recap the journey: the first phase of the vineyard was started in 2021 with an initial planting of 102 vines of Frontenac Gris, Adalmiina, Petite Pearl, and Crimson Pearl varietals. In 2025, we doubled our footprint by adding 120 new vines. We selected Prairie Star and St. Pepin—two white varietals bred to adapt to the extreme cold of Minnesota winters.

Expanding the vineyard required far more than just digging a few holes. First came heavy land clearing… and we mean heavy. We’re talking twelve 30-foot pine trees, along with a massive 55 ft maple that fell during a strong storm in March 2025. True to our sustainable mission, The Workshop at The Gardens harvested all the wood to be cut and dried using the onsite sawmill and wood kiln. (We’re very self-sufficient!)

The trees may be gone, but the stumps remained. After grinding down all 13 stumps and clearing the space, the hard-packed soil required substantial tilling. Once the soil had been cultivated, it was time to hand-dig 120 holes (each roughly 16” deep by 12” wide)—and it wasn’t easy. Thanks to the mature trees that once stood in this spot, the leftover root systems had to be extracted from a quarter of the holes. Once the holes had been dug, the 120 vines were planted and fitted with a protective grow tube to accelerate shoot growth.

To support the future vine canopy, we installed sturdy wooden end posts and steel line posts. In 2026, we began stringing high-tensile trellis wires to support the vines as they climb. And now we patiently wait. Grapevines typically take 3 years to establish a meaningful harvest, and 4–5 years to produce a full yield. So, we spend our days mowing, managing weeds, and keeping curious critters like raccoons, wild turkeys, and deer at bay.

With the vineyard becoming a popular backdrop for wedding photos, first looks, and private vows, it was time to build a covered wooden pavilion. This isn’t a kit or a preconstructed package. It was 100% designed and built onsite by The Workshop at The Gardens, just like every other structure on our property. We don’t do faux, and we don’t do artificial; we build authentic structures with true craftsmanship.

The next step is to lay the paver floor and pathway, followed by designing the surrounding landscape to anchor The Vineyard Pavilion seamlessly into the vineyard setting.

Situated at the south end of the vineyard, The Vineyard Pavilion adds a charming architectural feature to the space while serving as a beautiful setting for capturing special moments, no matter the weather.

What will we do with all these grapes? We are thrilled to share that planning is underway for a farm winery on the north side of The Gardens’ property—just a short, scenic walk from the vineyard itself! Stay tuned as this exciting addition grows.

Stately Wooden Lath House Covered Pergola for an Elegant Outdoor Wedding Ceremony

Who would have known that over 25 years ago, when we installed the cedar pergola on the walkway right in the middle of the nursery’s retail space, that it would turn into such an important part of The Gardens of Castle Rock?

As a landscape architect, I’ve always been intrigued by how structures define a garden. A pergola is a classic “gateway”—a grand entrance that moves you from one space to the next. It’s the perfect metaphor for a wedding: a literal gateway into your new life together.

While cedar is a wonderful wood, our original structure was finally starting to show its age. When it came time to replace it, we drew inspiration from the original design, but elevated it with everything we’ve learned since.

The new Lath House Covered Pergola is a testament to our commitment to authenticity and sustainability. The structure is crafted entirely from dead ash trees salvaged from our property that were affected by Emerald Ash Borer. All of the ash trees were milled into wood right here in our own log yard. To protect the timbers from the elements, we added a roof. The subtle eyebrow arch maintains an open pergola feel while also providing shelter. Underneath the roof, the ceiling is finished in rich black walnut, creating a beautiful contrast with the lighter ash timber.

The addition of the roof enhances that “gateway” feeling, playing with light and shadow as you walk through. This structure is now one of 11 authentic timber-frame builds at The Gardens, each showcasing a different aspect of the craft we love and providing a stunning backdrop on wedding days.

We can’t wait for you to walk under it on your way to your new forever.

The staff were always quick to answer questions and kept everything organized. The day of the wedding was crazy, but the Gardens Team all seemed to know exactly what to do. It was a huge relief to be able to focus on other things. Truly, we could not have asked for a more capable and attentive staff. Christina, the Set-Up Lead, was a blessing, and I don’t know how we would have managed without her.”

A Perfect Blend: Charming Timber-Built Covered Structure for Your Open-Air Outdoor Wedding

 

It all started with a tree—a towering heirloom Scotch pine that stood at the center of The Gardens for more than 80 years. It wasn’t just any tree; it became a symbol of the land, representing the nursery and landscape company that once thrived here. Over the years, it quietly witnessed countless transformations, including the biggest one of all—when the space evolved into a wedding venue. Naturally, the tree became a beloved backdrop for ceremonies, standing tall and proud in family photos and memories alike. To us, it wasn’t just part of the landscape—it was part of our story.

But as time passed, the tree began to show signs of decline. The question became: “How could we honor something that had meant so much to so many?” Glenn, with his deep love of timber framing and a new bandsaw added to The Workshop, saw potential in the tree’s final chapter. After examining every branch and curve, it became clear that no piece was straight enough for traditional framing. That’s when inspiration struck—the old-world elegance of a cruck frame, a style dating back to the 13th century that celebrates curved timbers. What followed was a blend of engineering, creativity, and reverence. Glenn and a team of skilled timber framers spent weeks sketching, measuring, and studying the tree’s natural form. The process required a hybrid French and English method of scribing the limbs and timber, laser precision, and the kind of problem-solving that only comes with experience—and a deep respect for the material.

In winter, the team gathered to cut and join the frame in The Workshop, a process that took 11 days of intense craftsmanship. While power tools helped shape the pieces, it was the hand tools—chisels, saws, and mallets—that brought out the frame’s soul. Each timber was a puzzle piece with its own personality. Then, in spring, the real magic happened. Footings were poured, dimensions double-checked, and the pre-assembled cruck bents were lifted into place, just 25 feet from where the tree had once grown. Somehow, through all the curves and challenges, everything fit—perfectly.

Today, the cruck frame stands as the ceremonial gateway to the Lath House wedding site. It’s more than a structure; it’s a tribute, a piece of living history made from a tree that had already touched so many lives. With delicate lights strung across its rafters and hand-carved details that only the keenest eyes notice, it adds whimsy and wonder to every wedding. For most guests, it’s simply beautiful. But for those who truly understand timber framing—the woodworkers, the builders, the cabinetmakers – it’s a quiet marvel. They see the complexity in the curves, the joinery, the choices made to preserve the tree’s natural form.

And that’s what makes it so special. The tree lives on—not just in the wood, but in every ceremony, every photo, and every memory created beneath it. What once stood as a symbol of a business now stands as a celebration of love, transformation, and timeless craftsmanship.
